Egg in a Basket

One of my favorite childhood foods.
I think eggs in baskets were recently mentioned on a food blog I read, like the kitchn or something, so they’ve been on my mind. I have such fond memories of my dad making these for us when we were little, I want to give C similar memories. I remember them being so deliciously buttery (though I think my dad probably used margarine). The fried bread circle was always my favorite part. When I was very young I think I requested the yolk broken in cooking because I only liked eggs cooked hard. Sometimes Dad would melt a Kraft single on top.
Today I kept it simple.
Egg in a Basket
Total time: 10 minutes
Serves: 1
Slice bread
Oil or butter
1 Egg
Salt and pepper
Cut a circle in your bread using a wine glass or something else about 2.5 inches in diameter or whatever size seems right to you. Grease your skillet with some oil or butter, heat over medium-low. Put your bread and the bread circle in the skillet. After a minute or so, add the egg, salt and pepper. Cook until the egg is slightly firm, then flip. Cook on second side to preferred doneness.
