Kimbap

Kimbap is like Korean sushi, except it doesn’t really taste much like sushi.

Tonight I used scrambled egg, sauteed carrot, sauteed broccoli stalk, avocado and canned tuna. I sauteed the carrot and broccoli to make them a little tender, but you could also steam or parboil. For the rice, I cooked sushi rice, let cool to room temperature, then tossed with a little rice vinegar. To assemble, lay out a piece of nori on a bamboo sushi mat. With wet hands, scoop out some rice and spread it thinly over the nori. Leave an edge of nori on at least one side. Place your fillings closer to the edge near you. Roll up, wetting the edge of the nori to help it stick. I painted a little toasted sesame oil on top of the finished rolls.

I made a spicy mayo to go with this, it was just mayonnaise mixed with sriracha to taste.

This was C’s first time eating anything like this and he loved it. He couldn’t bite the nori and didn’t want to put the whole thing in his mouth, so I broke it apart for him. He also liked the spicy mayo!
