I don’t have a picture for this post because I messed up the soba noodles and they were a sticky, goopy mess. Despite this, the sesame soba dish was delicious!
I was looking for new (to us) way to make tofu into a meal. And we had some soba noodles in the pantry that didn’t look like they were going to be made into anything anytime soon (we’re out of miso, so I haven’t been able to make my simple super soba). A friend had told me about 101 Cookbooks, and this sounded like the kind of problem that Heidi Swanson could solve. Otsu was the answer. I took some additional inspiration from this Smitten Kitchen recipe, adding edamame and sautéed cabbage instead of the cilantro and cucumber called for in the otsu recipe. I think a lot of different ingredients could go into this dish, the magic is in the sauce.
