Eggs for dinner!!!
The kids didn’t like this meal, but what do they know. I used this recipe as kind of starting point. Can tomatoes, no greens. I did not use chile pepper (for the kids’ sakes) but did add a pinch of crushed red pepper. The spices make this dish really rich and delicious. I’ve cooked eggs in the oven before and find it really hard to control their doneness. The stovetop method in the directions makes it easier to keep an eye on them.
