Some of the best muffins I’ve ever made.
It’s the same recipe as my blueberry oat muffins except with strawberries, and no cinnamon, add juice of one lemon. But these turned out super moist and fluffy. The only difference I can think of is the preparation of the oats. They soaked in soy milk and acid (vinegar) for longer than usual, maybe 20 or 30 minutes. And I added the lemon juice to this mixture (but not for the whole soaking time, maybe for the last five minutes). I think this broke down the oats more and somehow made everything better.
