Super Simple Soba

This is so easy I can’t believe I’m writing it. But let’s be honest, sometimes you need to cook something for lunch (or dinner) that is super easy.
One of my college professors introduced me to this super simple soba preparation. Cook soba noodles in a shallow pan. Drain, leaving some of the water to mix with miso paste and a bit of sriracha. Ta-da.
Sometimes I cook greens with the noodles, sometimes serve with fried egg, small pieces of nori, tofu, etc. But sometimes we don’t have any of those things in the kitchen so it’s just noodles for lunch (or dinner).
