So I was going to make a simple meat sauce for a pasta dinner, but it turned a little more complicated.<\/p>\n<p>Despite being urged to follow <a href=\"http:\/\/www.dinneralovestory.com\/real-deal-bolognese\/\">the bolognese recipe<\/a> to the letter, I couldn&#8217;t help myself and ended up taking a few liberties. Basically more vegetables (half a medium onion, two stalks celery, one carrot) because I don&#8217;t like to measure those with spoons and cups, more meat because we bought a whole pound, one clove garlic because I couldn&#8217;t resist, and only a couple of glugs of wine because I wanted more for myself. Like I said, it&#8217;s been a rough week. But maybe I should have followed it more closely. It was without a doubt good, but I&#8217;m still not satisfied with the results. Maybe I just need to get back to my roots and make a not-fancy meat spaghetti sauce like my dad used to make.<\/p>\n<p>After making the sauce I realized that we didn&#8217;t have any long pasta in the pantry. So I decided to make some. I followed <a href=\"http:\/\/thepioneerwoman.com\/cooking\/2009\/05\/homemade-pasta\/\">the instructions here<\/a>. It&#8217;s so simple it can hardly be called a recipe. I cut my noodles wide like tagliatelle.
