But I now know I never need to try another recipe.<\/p>\n<p><a title=\"vegan chili by leighadactyl, on Flickr\" href=\"https:\/\/www.flickr.com\/photos\/leighadactyl\/15605383290\"><img decoding=\"async\" src=\"https:\/\/farm8.staticflickr.com\/7533\/15605383290_2e57ed2588.jpg\" alt=\"vegan chili\" \/><\/a><br \/>\n<!--more keep reading...--><\/p>\n<p>My parents always made chili from a can (I think Van Camp&#8217;s brand), and I loved it (my dad would usually put a jar of tamales in it, removed\u00a0from their paper husks\u00a0and sliced). I also love eating chili at restaurants and bars, <a href=\"http:\/\/www.farmburger.net\/\">Farm Burger<\/a> in Decatur (GA) has a great meaty bean chili, and I have a soft spot in my heart (and belly) for <a href=\"http:\/\/www.stayrighteous.com\/\">the Righteous Room<\/a>&#8216;s vegetarian black eyed pea chili. And I feel like I have to mention that I worked at a <a href=\"http:\/\/www.petros.com\">chili fast food restaurant<\/a> for basically all of my teen years.<\/p>\n<p>Despite this obvious love of chili, I don&#8217;t cook it much because I don&#8217;t want to &#8220;waste&#8221; meat on it (I&#8217;d rather have a hamburger). But this recipe has set me straight. Chili doesn&#8217;t have to have meat!<\/p>\n<p><a title=\"P1060002 by leighadactyl, on Flickr\" href=\"https:\/\/www.flickr.com\/photos\/leighadactyl\/15170776703\"><img decoding=\"async\" src=\"https:\/\/farm8.staticflickr.com\/7499\/15170776703_c7898a8861.jpg\" alt=\"pureed peppers\" \/><\/a><\/p>\n<p>I&#8217;m not sure, but I think the masa is an important ingredient, it gives a nice flavor and texture. The pureed peppers also add a lot of texture (and flavor, duh).<\/p>\n<p><strong>The Best Vegan Chili<\/strong><br \/>\nAdapted from <a href=\"http:\/\/www.seriouseats.com\/recipes\/2012\/01\/best-vegetarian-bean-chile-recipe.html\">Serious Eats<\/a><br \/>\nYield: 6-8 servings<br \/>\nTotal time: 2 hours (about 30 min active) (not including bean cooking time) (plus overnight resting if you&#8217;d like)<\/p>\n<p>2 bell peppers (not green)<br \/>\n1 poblano pepper (you could probably just use three bell peppers)<br \/>\n2-3 chipotle chiles canned in adobo sauce<br \/>\n1 1\/2 Tbsp cumin seed<br \/>\n2 tsp oregano<br \/>\n2 Tbsp olive oil<br \/>\n1 large onion, chopped<br \/>\n3 cloves garlic, minced<br \/>\n1 scant Tbsp miso (or soy sauce)<br \/>\n28 oz can tomato<br \/>\n3 c dried kidney and\/or pinto beans, soaked and cooked (reserving pot liquor)<br \/>\n2 Tbsp bourbon<br \/>\n2-3 Tbsp masa harina<\/p>\n<p>Broil peppers, rotating them periodically to blister and blacken. Let rest covered. Peel and rough cut. Puree broiled peppers and chipotles in food processor.<br \/>\nIn a med-hot dry pan, toast cumin for a few minutes, adding oregano at the end. Grind spices.<br \/>\nHeat oil in soup pot, saute onion until soft, about 4 minutes.<br \/>\nAdd garlic and spices, cook until fragrant, about 30 seconds.<br \/>\nAdd peppers and miso, cook until fragrant, about 30 seconds.<br \/>\nAdd tomato and beans with some to all of their cooking liquid.<br \/>\nBring to a boil, then reduce heat to barely a simmer. Cook uncovered 1 to 1-1\/2 hours, monitoring liquid and adding more liquid if necessary.<br \/>\nStir in bourbon, add masa to desired thickness.<br \/>\nServe immediately or cool and refrigerate overnight or longer before reheating and serving.<\/p>\n<p>We had this with avocado, cheddar cheese and sour cream.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I should first say that I&#8217;ve never before made vegan chili.
