So I guess it&#8217;s become (is becoming?) a tradition for us to have salmon for Mother&#8217;s Day dinner.<\/p>\n<p><a title=\"IMG_0772 by leighadactyl, on Flickr\" href=\"https:\/\/www.flickr.com\/photos\/leighadactyl\/17695308162\"><img decoding=\"async\" src=\"https:\/\/c4.staticflickr.com\/8\/7725\/17695308162_7d8d2bec31.jpg\" alt=\"IMG_0772\" \/><\/a><\/p>\n<p><!--more keep reading...--><\/p>\n<p>This year I tried the &#8220;low and slow&#8221; oven method: 250 degrees for about 30-40 minutes. It turned out just fine, but nothing spectacular. And the drawback is, no crispy skin or edges, which are the best part of salmon.<\/p>\n<p>The real star of Mother&#8217;s Day dinner were the butter boiled potatoes. I used <a href=\"http:\/\/www.marthastewart.com\/1050208\/stove-top-potatoes\" target=\"_blank\">this Martha Stewart recipe<\/a> and <a href=\"http:\/\/www.deepsouthdish.com\/2012\/07\/butter-steamed-new-potatoes.html\" target=\"_blank\">this Deep Dish South recipe<\/a>\u00a0as jumping off points, but the basics are this: quarter new potatoes and add to a skillet. Cover with water, add a bit of olive oil and butter (maybe 3 Tbsp combined), some garlic, some green onion, pepper. Boil vigorously until the water is evaporated. Salt to taste.<\/p>\n<p>And it wouldn&#8217;t be a proper post here unless I piled on an assortment of other dishes I&#8217;ve made in recent months (but didn&#8217;t photograph and never wrote about):<\/p>\n<p><a href=\"http:\/\/smittenkitchen.com\/blog\/2015\/04\/salted-chocolate-chunk-cookies\/\" target=\"_blank\">Salted chocolate chunk cookies<\/a>. They are worth adding to the recipe collection.<\/p>\n<p><a href=\"http:\/\/www.thekitchn.com\/recipe-roasted-cabbage-with-bacon-recipes-from-the-kitchn-105338\" target=\"_blank\">Roasted cabbage with bacon<\/a>. This was good, if\u00a0you have a lot of cabbage. I don&#8217;t know if I would buy a head for it.<\/p>\n<p><a href=\"http:\/\/www.marthastewart.com\/281053\/braised-fennel-and-white-beans\" target=\"_blank\">Braised fennel and white beans<\/a>. These were really good, a great way to use fennel.<\/p>\n<p>Black bean enchiladas, inspired by\u00a0<a href=\"http:\/\/www.thekitchn.com\/recipe-baked-black-bean-and-avocado-burritos-recipes-from-the-kitchn-217154\" target=\"_blank\">this recipe<\/a>. I don&#8217;t remember the exact\u00a0ingredients used in the filling, probably beans, butternut squash or beets, greens, corn, etc. I&#8217;ve made topped with cheese and cheese on the side (along with sour cream, avocado, etc.). Using the <a href=\"http:\/\/www.leighadactyl.com\/food\/cabbage-stew-and-catching-up\/\" target=\"_blank\">enchilada sauce I&#8217;ve mentioned before<\/a>. I made <a href=\"http:\/\/chickensintheroad.com\/farm-bell-recipes\/soft-flour-corn-tortillas\/\" target=\"_blank\">half flour-half corn tortillas<\/a> and they were great; they really do have the flavor of corn but flexibility\/sturdiness of flour: they didn&#8217;t dissolve the way corn tortillas will when you make baked enchiladas. (Homemade tortillas seem like a ridiculous labor of love to me, so much time involved pressing the tortilla (or in my case, rolling with a rolling pin), then cooking individually on the skillet. But they are delicious and if you don&#8217;t count your time, very cheap.) I served the enchiladas with <a href=\"http:\/\/www.food.com\/recipe\/leftover-rice-made-into-spanish-rice-477777\" target=\"_blank\">spanish rice using leftover rice<\/a>, and also <a href=\"http:\/\/www.simplyrecipes.com\/recipes\/spanish_rice\/\" target=\"_blank\">spanish rice made from scratch<\/a> (not pre-cooked rice). The leftover\u00a0rice was really easy to make and good way to use leftover rice other than fried rice. I was a little concerned about making the from scratch version, because I did it on the stove and usually use my rice cooker to cook rice, but I think this kind of rice is better a little gooey and sticky, which is what usually happens when I cook rice on the stovetop.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Mother&#8217;s Day coincides with king salmon season in Northern California.
