I haven’t posted in a while but rest assured we’re still cooking and eating.

Squash, onion, sausage, corn

I think it’s safe to say that everyone in the family liked this galette (Mark said it was like a pizza, and that’s probably his highest compliment). Filled with acorn squash, lightly caramelized onion, Italian sausage, corn and a little cheddar. It’s another good naptime recipe, because all the ingredients can be prepped ahead of time and thrown together right before dinner. Next time I’d like to add something green, cut down on some of the butter (the recipe calls for a whole stick!), maybe leave out the cheese or try adding egg. I don’t know that you really need a recipe for the filling, it’s more of a throw it together sort of thing. I was inspired by these two recipes, and delighted that one of them was inspired by the other.

I used the cornmeal crust recipe and it was a perfect texture. Roasted the squash with olive oil. Removed two Italian sausages from casing and browned in a skillet (I used one spicy and one mild, squished together, but it was still a little too hot for C. Maybe all mild next time…). Removed sausage and added a bit of butter to the pan, lightly caramelized onions (just golden and tender, maybe 30 minutes on low). Cut corn kernels from the partially-eaten cob C left on his plate the night before. Shredded just a bit of cheddar cheese, maybe 1/4 or 1/3 cup.
