Tuna Melts, etc.

I’ve been trying to put fish on our menu once or twice a week, but with two kids, etc., we don’t get to the fish monger or butcher or whole foods frequently to get fresh fish. Sometimes we have something frozen, but more often than not, fish night means something from a can, usually tuna melts or salmon patties. Last night it was tuna melts!

I don’t have a recipe for tuna salad, just tuna, mayo and whatever is in our fridge that seems good. We also had crash hot potatoes. There are “recipes” for this all over the internet, but I think I first learned of it here. Basically: steam, boil or bake your potatoes, smash them, bake them.

Everything was a bit soggier than I would have liked, I think I over-steamed the potatoes and maybe the bread was too soft to stand up to the tuna salad. Oh well, next time!
