Pasta Bolognese

Another pasta night.

It’s been kind of a rough week around here, with baby L generally fussy and not napping well, and C still working on #2 potty training. So I was going to make a simple meat sauce for a pasta dinner, but it turned a little more complicated.

Despite being urged to follow the bolognese recipe to the letter, I couldn’t help myself and ended up taking a few liberties. Basically more vegetables (half a medium onion, two stalks celery, one carrot) because I don’t like to measure those with spoons and cups, more meat because we bought a whole pound, one clove garlic because I couldn’t resist, and only a couple of glugs of wine because I wanted more for myself. Like I said, it’s been a rough week. But maybe I should have followed it more closely. It was without a doubt good, but I’m still not satisfied with the results. Maybe I just need to get back to my roots and make a not-fancy meat spaghetti sauce like my dad used to make.

After making the sauce I realized that we didn’t have any long pasta in the pantry. So I decided to make some. I followed the instructions here. It’s so simple it can hardly be called a recipe. I cut my noodles wide like tagliatelle. It was pretty good, but I think overall that the meal lacked something…I guess we’ll try again next time…
