Earlier in the week I made this tomato braised chicken recipe (using leg-thigh pieces instead of just thighs, served with brown rice and a sprinkle of parsley). It was okay, but maybe not something I’d do again. After that meal there was leftover chicken and rice, so we were all set for chicken fried rice the next day.
Maybe this is more properly called “unconstructed”? We had some frozen corned beef leftover from St. Patrick’s. Last week, we got beets, cabbage, potatoes and onions in our CSA share. So red flannel hash it was.
If you want to be fancy, call these salmon croquettes. They could also be salmon cakes, like crab cakes. It’s just another way to use canned fish. A delicious way.
Sirloin steak was on sale recently.
A while ago Mark grilled some steaks we bought off some guys in a truck. We cooked two more earlier this week.
Some people say there’s a difference between grits and polenta. I’m not so sure.
With the refrigerator repaired with the promise that it will fail again in a day or two, and take our freezer out with it, we haven’t been using it for much food storage and haven’t been doing much cooking. Last night we ate frozen foods to cut potential losses, but I’ve been feeling a little down from the stresses of life, nothing a little cooking wouldn’t solve.
Our fridge is dying a slow death, so I haven’t been thinking much about meal preparation, aside from what is still edible from the refrigerator and what we can cook from the freezer.
We bought these steaks from a guy on the side of the road.
